In Hubei, sturgeon bred for food and caviar

Yidu, Hubei province, offers people fresh and nutritious sturgeon and roe — or caviar — an expensive delicacy made from the eggs of the ancient line of bony fish that coexisted with the dinosaurs.

The city is now home to the largest sturgeon breeding center in China, with 1.1 million adult sturgeon and more than 10 species. Annual caviar production has reached 100 metric tons.

Yidu has cooperated with scientific research institutes to develop pioneering technologies in sturgeon breeding. It plans to build a museum, experience hall, theme park, trade market, scientific research base and digital center to promote modern agriculture that combines breeding, processing, tourism, education and entertainment.

Its industrial output value is expected to surpass 10 billion yuan ($1.43 billion).
