Caviar produced in Quzhou, Zhejiang province has in recent years gradually gained international recognition due to its excellent quality.

The delicacy has not only been served in the first-class cabins of airlines such as Lufthansa, Cathay Pacific, and Singapore Airlines, but has also made an appearance at the Oscars dinner.

Quzhou caviar is currently exported to over 40 countries and regions, including France, Germany, and the United States. Its export volume accounts for nearly 70 percent of the national total and one-third of the global market supply, making it a leading player in the caviar industry.

The production process of Quzhou caviar places high demands on time. Steps such as egg extraction, egg washing, water draining, grading, marinating, and canning, all need to be completed within a strict 15-minute timeframe.

Meanwhile, the entire area of each caviar production workshop must maintain a low-temperature environment throughout the production process to ensure quality.

The high quality of Quzhou caviar is not solely attributed to its strict time control during production, but also to the rigorous control of the raw material's quality. 

Quzhou boasts the world's largest single sturgeon farming base, covering an area of nearly 600 mu (40 hectares). For nine years running, its caviar production levels have consistently topped all competing cities worldwide.

Caviar, referred to as "black gold", is highly prized for its rich nutrition and delicate texture. It is regarded as one of the world's three culinary treasures, alongside foie gras and black truffles.
