Pig head bacon

On the day before New Year’s Eve, Tujia people will eat pig head bacon, which is their custom. Every year, ahead of the Spring Festival, Tujia people will remove pig head bacon from the roof and wash them repeatedly for steaming and eating at night. A pig head can be made into 9 dishes, which is a must for Tujia people to celebrate Spring Festival.
