Stir-fried Pork Kidney, with onions and green peppers as its other main ingredients, tastes tender and smooth but not greasy. The other ingredients and seasonings vary from place to place, and thus the dish has different flavors of sweetness, sourness, saltiness or spiciness.

Pork kidney has high nutrient value, is rich in vitamins B12, B6, C and H, protein, myo-inositol, folic acid, pantothenic acid, as well as minerals. However, due to its high levels in cholesterol and purine, the elderly and people with high cholesterol and hyperlipidemia should not eat this dish.
