Scalded Tofu Shreds (Yangzhou gan si)

Scalded tofu shreds represent one of the basic requirements of life for the people of Yangzhou. Dried tofu is cut into 28 pieces which are further sliced into thin shreds. The shreds are then scalded in boiling water three times to remove any bean flavor. Finally, the tofu is marinated in sesame oil, the subtle taste complementing the soft texture.
