Huishao noodles: a delightful Jinpu specialty

Huishao noodles are the most renowned breakfast in Jinzhou district, boasting a history of more than 100 years. In early 2011, Huishao noodles were designated as an intangible cultural heritage of Dalian, becoming the first municipal-level intangible cultural heritage in Liaoning province.

Legend has it that a long time ago there was a noodle shop where the owner would cook a large pot of noodles and then store them in another large pot to keep them dry. When customers arrived, the noodles would be scooped into a bowl and served with a special sauce. However, the leftovers didn't retain their good texture for long.

The clever chef, Mr. Zhefu, came up with a solution. He prepared a large pot of bone broth and fried spring onions. When customers arrived, he would put the pre-cooked noodles in a large ladle, pouring the bone broth over them and add the spring onions, and then serve a bowl of Huishao noodles.
