Yangzage is also known as Yangzasui, a noted snack in Shanxi, where Yangzage shops can be found everywhere. Usually, the shops fire up a big pot to make soup stock. Yangza, or sheep haslet, is then put into the pot.
When Yangza is cooked with vermicelli, scallion, ginger and cilantro in the soup, it smells amazing. Mutton fat floats on the soup along with vinegar, pepper and chili, adding to the flavor.
Two of the traditional yangzage shops in Taiyuan are Haoganggang Yangza and Gulou Yangza; both worth more than one try.
