Quzhou pancake, a Chinese-style roast cake, is a traditional local delicacy in Quzhou, Zhejiang province. Its main ingredients are flour, chopped scallion, pork and dried mustard cabbage, and sometimes preserved vegetable are added according to consumers’ requirements. The cake has to be pasted to the wall of a charcoal stove to be roasted, so it is better to call it a roast cake. The technique for making Quzhou pancake is rather delicate. Put the pork and chopped scallion in the dough, flatten the dough into a cake about 3 to 4 centimeters thick, and paste the cake to the wall of a specially designed charcoal stove. The diameter of the mouth of the stove is only about 33 cm. In this way, convection can be formed inside the stove, and the aroma of the cake will be well preserved. But the pancake makers generally say that this design allows them to put as many small cakes as possible into the stove. After being roasted for a while, the pancake starts flowing oil and the aroma wafts through the mouth of the stove. At this moment, you can take the pancakes out of the stove with pliers. The crispy pancake with thin skin, tender meat, and strong aroma is widely acclaimed by consumers.
