This dish is reputed to have originated on Baiyun Mountain and hence, derives its name from the locale. In this dish the bone and flesh on the trotter are easily separated. The skin is tender and the flesh, crispy. This dish goes very nicely with wine and is said to improve the complexion and to help maintain a sense of youthfulness.


3.Baijiao Sea Bass 白蕉海鲈 bai jiao hai lu

The sea bass is a nationally protected geographical indication product of Baijiao in the city of Zhuhai.

The sea bass has tender meat, a hefty stomach, delightful flavor, and a high meat ratio. It has been praised by poets and experts and also has spawned the Baijiao Sea Bass Championship and the Baijiao Sea Bass Cup Prose & Photography Contest.


4.Fried Chicken Feet with Oyster Oil 蚝油凤爪 hao you feng zhua

Guangdong's citizens are fond of chicken feet and prepare them in various ways. This dish features meticulous cooking techniques. The feet are first boiled, then fried and finally braised until they turn an attractive golden color.


5.Guangzhou Wenchang Chicken广州文昌鸡 Guangzhou wen chang ji

During the 1930s, Guangzhou master chef Liang Ruijiang created this ingenious dish by removing the bones before boiling, steaming and frying the chicken meat with ham and chicken liver. By doing so, he made the best use of the ingredients, circumventing their disadvantages to result in an immaculate dish.


6.Sliced Suckling Pig片皮乳猪 pian pi ru zhu

This dish features a suckling pig prepared with a bright red, oily textured skin and tender meat.

Its unique flavor has earned it widespread popularity. Roasted suckling pig is one of the grandest dishes for the people of Guangdong and Guangxi provinces, and is served when entertaining guests at home or in a restaurant.

Lettuce in Oyster Sauce, a famous Cantonese cuisine, is very popular in every season. It is known for its effectiveness in clearing heat and diminishing inflammation. This dish is rich in nutrients, and is fresh, tender, and tasty.


8.Huadiao Chicken 花雕鸡 hua diao ji

One of the top eight chicken dishes in Guangzhou, Huadiao Chicken, is a highlight of Guangzhou Beiyuan Restaurant. The chicken is stewed in an earthen pot where heat is transmitted through grease produced from fried fat. A small amount of juice and Huadiao liquor is added to the pot to facilitate cooking.
