Four traditional culinary delicacies are being applied for eighth-group Doumen intangible cultural heritage items, according to a June 25 public notice on the district website.

With a history of more than 20 years, two of the selections --Double-Shelled Crab and Doumen Xiaofeng Cake (Chicken Cake) -- are signature dishes of Yi Li Restaurant. The others are moon cakes and eels.

Crabs are halved and steamed at Yi Li after being removed from the shell. Secret-recipe soy sauces poured over the dish upon serving are touted to be its soul.

Xiaofeng Cake is a famous chicken-shaped Cantonese dim sum with a golden, crispy crust. It has a rich taste that mixes the sweetness and saltiness of pork, sugar, white sesame seeds, melon-seeds, olives, and other fillings.
