Seafood noodles is an absolute knockout dish in Zhoushan. People can choose any ingredients they like and bath them in a delicate, salty, lemon broth. There are no limits, no taboos and no bad matches: yellow croakers can go with clams; shrimps taste even fresher with pork ribs; oysters are creamier and sweeter when cooked in chicken broth.
The broth of the noodles is the highlight of these dishes. The unusually fresh flavor is brought up by hours of stewing of chicken, pork or shellfish. To add flavor to their noodles, people can add all kinds of vegetables, such as cilantro, green pepper, Chinese cabbage and mushrooms. Everything goes well with each other in a bowl of noodles.
