Zhoushan yellow croaker(舟山大黄鱼)

Zhoushan island is the home to large yellow croakers. There are dozens of recipes for cooking fresh yellow croaker, such as roasting, stewing, frying and salting. Fresh yellow croakers, salted and dried after being cleared inside, are called dried yellow croaker, also called "dried fish". 

The processing of Zhoushan dried fish have gone through a series of procedures, including rinsing, cleaving, cutting, viscera removing, salting, rinsing, tedding and reshaping. 

Fish glue is the main non-staple products during the course of processing. After seperate it from the main body of the fish, it can be made into a rare kind of fish oil, which is one of the favourite local specialties for tourists. 

The dried yellow croaker, finely processed, is white in color, round in shape, fresh in taste and moderately salted. It also contains rich protein. A great amount of fat elevates the texture.
