Qigao Cake

Qigao cake is a popular snack in Kaihua county, Quzhou city. It won the golden prize as a quality product at Zhejiang Agriculture Fair in 2016. 

On traditional festivals, such as Mid-Autumn Day, Dragon Boat Festival and Double Ninth Festival, Kaihua people prepare the ingredients to make qigao cake. Rice is ground into rice milk and then spread in a bamboo steamer which is placed into a big iron pan. People can sprinkle pork, small shrimp and other stuffing on the cake according to their personal preferences. It takes 10 minutes to steam the cake and then it is cut into a diamond shape before being serving. Finally, we have the soft, white and elastic snack that makes mouths water.

The cake originated in the Tang Dynasty (618-907) and came into vogue during the Ming (1368-1644) and Qing (1644-1911) dynasties.
